
Long black “stringy things” in recently baked muffins – please help (images available)?
I baked some banana muffins yesterday morning using some Splenda mix brown sugar that I found in the pantry (it’s old, but upon inspection & taste testing, appeared to be fine). The ingredients were cinnamon, nutmeg, flour, mashed bananas, white and brown sugar. I added crumb topping after baking for a bit which consisted of Fleischman’s unsalted margarine (which can be used for baking), light brown sugar (regular, not Splenda, & also old), and a little bit of flour. If I can, I’ll add a photo. I’m worried that the brown sugar (which has no expiration date) may have something to do with this. If anyone can tell me, with some degree of certainty, what these black things are, I’d really appreciate it. The pics have been uploaded to Twitter & can be found here:

Don’t worry those are called Phloem bundles and they carry all the nutrition in the bananas. They are the little stringy parts of the banana that come off of the skin of the banana when you peel it. Oh and they are black because they have been baked but they are totally edible.
